APPELLATION: Wine from overripe grapes TERRE SICILIANE Grillo I.G.P.

GRAPES: 100% grillo

TRAINING SYSTEM: Guyot, Standing bush

SOILS: Red soils, marls, clay.

VINIFICATION: 48-hour maceration on the skins.

MATURATION: 1,000-liter chestnut barrel for 7 years in total. Filled with the same wine for the first two years, then 5 years without topping the cask (oxidative style)

TASTING NOTES: Golden in color with amber highlights. The nose is articulate and decidedly complex; hints of almonds and walnuts, in particular, stand out. On the palate it is warm, persuasive, persistent

recommended pairings

Served at 13°, it is excellent with oysters and spaghetti with tuna bottarga; raising the serving temperature to 15-17° goes well with main fish dishes, white meats and medium-long hard cheeses.
