GRAPES: 100% Catarratto

TRAINING SYSTEM: Guyot, Standing bush

SOILS: Red soils, marls, clay.

VINIFICATION: 48-hour maceration on skins

MATURATION: 1,000-liter chestnut barrel for 7 years in total. Filled with the same wine for the first two years, then 5 years without topping the cask (oxidative style)

TASTING NOTES: Golden in color with amber highlights, a wine of great organoleptic complexity: hints of baked fig, almonds and walnuts. Elegant and intense bouquet, with freshness and salinity typical of our wines.

Served at 15°-17° it is excellent with game, hard cheeses and even offal
